Cheryl’s Recipe Corner!
Easy Skillet Lasagna
Description
We are fans of lasagna, but it just takes too long! This recipe makes it quick and easy, only dirties 1 pan, and is done in 30ish minutes!
Ingredients
1 pound lean ground beef
1 small onion, chopped (1/4 cup)
1 small green bell pepper, chopped (1/2 cup)
1 1/2 cups uncooked mafalda (mini-lasagna noodle) pasta (3 ounces)
1 1/4 cups water
1/4 teaspoon Italian seasoning
1 3/4 Tomato basil pasta sauce (from 25.5 oz. jar)
1 jar (4.5 ounces) sliced mushrooms, drained
1/3 cup shredded mozzarella cheese, if desired
Directions
Cook beef, onion and bell pepper in Dutch oven over medium-high heat about 6 minutes, stirring occasionally, until beef is brown; drain. Stir in remaining ingredients except cheese. Heat to boiling, stirring occasionally; reduce heat to low. Simmer uncovered 10 to 12 minutes or until pasta is tender. Sprinkle with cheese.

Blackberry Cucumber Vodka Tonic
Description
This vodka and cucumber cocktail is a refreshing and colorful spin on the classic cocktail!
Ingredients
4 slices cucumber
5 fresh blackberries
1 cup crushed ice
1.5 ounces vodka
3 ounces tonic water
Directions (Cocktail)
Muddle 3 slices of cucumber and 4 blackberries in the bottom of a rocks glass. Fill glass with crushed ice and add vodka. Top with tonic water and stir to combine. Garnish with remaining slice of cucumber and blackberry.
