      • Description:
        • This is a recipe I served in the house for YEARS, and we loved it.  Super easy to prepare, and everyone will rave about it!
      • Ingredients:
        • 1 whole chicken (4 lbs./1.8 kg or smaller)
        • 2 tbsp (30 mL) vegetable oil
        • Juice from ½ small lime (about 1 1/2 teaspoons)
        • 2 tsp (10 mL) sugar
        • 1½ tsp (7 mL) ground cumin
        • 1 tsp (5 mL) ground paprika
        • 1 tsp (5 mL) ground oregano
        • 1 tsp (5 mL) salt
        • ½ tsp (2 mL) black pepper
        • 4 garlic cloves, pressed
      • Directions:
        • Pat the chicken dry with a paper towel. Combine the remaining chicken ingredients in a small bowl and coat the chicken with the mixture.
        • Set your Air Fryer* to Roast (approximately 400 degrees).
        • Tie the legs together with a 12" (30-cm) piece of cooking twine. Tie the wings against the breasts with a 24" (61-cm) piece of twine (Making sure the string doesn’t touch the sides of the heating element). Place the chicken on the Sheet Pan.
        • When your air fryer reaches the desired temperature, add your chicken. Rotate the pan halfway through cooking.
        • Check the temperature of the chicken toward the end of cooking and add additional time as needed, or until the chicken reaches 165°F (74°C).
    • Peruvian Green Sauce
      • Ingredients:
        • ½ medium bunch cilantro with stems (about 24 sprigs)
        • 1 jalapeño, seeds removed
        • Juice from ½ small lime
        • 2 garlic cloves, pressed
        • ¼ cup (60 mL) grated Parmesan cheese
        • 1 tbsp (15 mL) white vinegar
        • ¼ tsp + ⅛ tsp (1.5 mL) salt
        • ½ cup (125 mL) mayonnaise
      • Directions:
        • Combine the sauce ingredients in a Blender or Food Processor and pulse until combined. Serve the sauce with Peruvian Chicken.
    • Arrocito (Peruvian Garlic Rice)
      • Ingredients:
        • 4 tablespoons oil
        • 4 cloves garlic, minced
        • 2 cups (400g) long grain white rice
        • 2 ½ cups (600mL) water
        • 1 teaspoon sea salt
        • Large pinch cumin
      • Directions:
        • In a large saucepan, heat the oil over medium heat. Add garlic, sautéing until fragrant but not brown. Add rice and cook in the oil for a minute or two, until some grains begin to look golden.
        • Add water, salt, and cumin to the pan and bring to a boil. Cover with lid and reduce heat to maintain a simmer for 15 minutes (avoid lifting the lid during this time), until the liquid has been absorbed. Fluff rice with a fork, remove from heat and let sit, covered, for 5 minutes before serving.
    • Notes:
      • *If you don’t own or don’t want to use your air fryer, bake at 400 degrees for approximately 1 hour, or until internal temp reaches 165 degrees.
      • You can substitute pieces of chicken, instead of using a whole chicken.  Depending on how much chicken you’re preparing, you may have to increase your coating mixture.  Again, cook the chicken to an internal temp of 165 degrees.
      • I cheat… on nights I don’t want to mess with grocery shopping and “slicing and dicing”, I use dried Cilantro, Jarred pre-diced jalapenos and “Jarlic”
      • The garlic rice is always a hit, and Russ was a huge fan of having some steamed Cauliflower with this dish - the Green Sauce was usually drizzled over the rice and Cauliflower as well - so I always made extra sauce!
  • Bill’s Whatever Corner
    • Item: Drekker Brewing Company of Fargo, ND - Brunch Bubbz Fruited Sour Ale/Mimosa Sour
    • Description: This new mimosa sour carefully conjured by our brewing wizards makes waking up early WORTH IT. It’s got a fresh orange and nice crisp champagne adjacent flavor, with the effervescence turned up a notch for that mimosa-y bubblefest on the tastebuds.
    • Down & Dirty: Bright, fresh orange flavor with a crisp, champagne-like effervescence designed to mimic a classic mimosa.
    • FYI: Lactose & Gluten Free
    • ABV: 5.0%

    • Memorial Service for Russ, K5TUX
      • We are down to just a few weeks before the Memorial party, for Russ, that will happen at our home in SW Missouri!  November 1, 2026 - noon to 5pm!  Everyone is welcome, but I need you to RSVP IMMEDIATELY as the food truck that will be feeding all of us (my treat!) needs a final headcount by October 20th.
      • We will be doing the fun stuff Russ loved to do… first off, meeting those that helped shape Russ’s life through Ham Radio, his job/computers, music, poker and random friends.  There will Texas Hold’em Poker, Bowling, playing Pool, arcade video games, maybe some Geocaching, Cards Against Humanity, etc.  The guest book will be a permanent thing, doing an art project that Russ enjoyed doing.  I hope Bill will have time to set up a radio or two for folks to play with (I’m still trying to get Russ’s callsign turned into a Memorial… I’ve seen faster snails!). And FOOD!  We’ll be serving foods that Russ LOVED and we’ve put a fun spin on them by making each of them into a “fusion taco”!  There will be desserts and such, too… so come hungry, if you’re joining us!

    • Hi, I’ve been enjoying Linux in the Ham Shack — the way your show notes always surface free and open-source ham software is exactly why I’m writing. I run morsecodetranslater.com, a free Morse code translator that runs entirely in the browser: instant text to Morse, full alphabet chart, timing guides. Nothing to install, which makes it handy for quick demos. Would you consider mentioning it on the show or in the show notes? I know Morse decoders have come up as a topic before. Happy to send a one-liner you can read as-is. Just reply yes if you’re up for it. Mudassir Hussain
