  • Rangoon Stuffed Chicken
  • Description
    • In one of my kitchen adventures, I decided to try mixing together a few of our favorite things... I'm pretty sure that it was a winner for Russ.
  • Ingredients
    • 2 Boneless Skinless Chicken Breasts
    • 8 oz Cream Cheese, softened
    • 1/2 Cup Sliced Green Onions
    • 2 Tablespoons Honey
    • Dash of Worcestershire Sauce
    • Salt, to taste
    • Pepper, to taste
    • Garlic Powder, to taste
    • 5 eggs, beaten
    • Panko Crumbs
    • Thai Sweet Chili Sauce
  • Directions
    • Using a meat mallet, flatten chicken as thinly as possible on a cutting board without causing the chicken to break down and develop holes. Set aside. Mix together cream cheese, green onion, honey, Worcestershire sauce, salt, pepper and garlic powder together. Place the cream cheese mixture on half (short side) of one of the flattened chicken breasts, then fold over. Repeat on second chicken breast.  Reserve a few tablespoons of the filling to garnish your prepared chicken breasts. Place beaten eggs in a bowl that you can dip the chicken in.  In another bowl (that you can dip the chicken in), place panko flakes. Dip chicken in egg, then panko, then re-dip in egg, following up with panko (you'll want to "press" panko onto the chicken to make sure it is well coated). Place chicken in a well greased baking dish and bake at 400 degrees for 20 minutes (I prepare mine in an air fryer).  Once done I place a dollop of the filling on top of each chicken breast and drizzle Sweet Thai Chili Sauce on top.

    • This would be a great cocktail to go with your Rangoon Chicken...
  • Ingredients
    • 1-1/2 ounces gin (preferably dry gin)
    • 1/2 ounce cherry brandy or cherry heering
    • 1/4 ounce Cointreau
    • 1/4 ounce Benedictine
    • 4 ounces fresh pineapple juice (preferably fresh pineapple juice)
    • 1/4 ounce lime juice (preferably fresh lime juice)
    • 1/4 ounce grenadine
    • 1 dash of Angostura bitters
    • Ice cubes
    • Optional: Slice of pineapple or maraschino cherry, for garnish
  • Directions
    • Combine all ingredients (except for the garnishes) into a cocktail shaker. Shake until chilled. Strain into a chilled tall glass (like a Hurricane glass, highball glass, or Collins glass) filled with fresh ice. Garnish with the pineapple or cherry, if desired. Serve cold.
