- What: It’s time for W9I, the Illinois State Fair special event station, to come back to life. But, this year Covid-19 has changed everything! The actual fair has been canceled so as not to spread the virulent virus. How does that effect amateur radio? We are used to communicating during emergencies such as floods and storms. So, how is the pandemic any different? It isn’t!! This year, as in years past, any SVRC club member is invited to join. The only difference is that we will be operating from our homes or safe remote locations of our choosing – just not at the State Fairgrounds.

This Weekend in Hedonism (Segment 3)

- Beef Taco Skillet
- Ingredients
- 1 pound ground beef
- 1/2 cup Diced Onion (optional)
- 1 packet of Taco seasoning (or your own homemade taco seasoning)
- 1 can (10 3/4 ounces) Tomato Soup
- 1/2 cup sour cream (optional)
- 1/2 cup frozen or canned whole kernel corn (optional)
- 1/2-1 cup Picante Sauce or Salsa (use the 1 cup, or more, if you add onions and/or corn)
- 1/2 cup water
- 6 flour tortilla (6-inch), cut into 1-inch pieces
- 1/2 cup shredded Cheddar cheese (about 2 ounces)
- Directions
- Cook the beef (and onion, optional) in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off any fat. Stir the taco seasoning, soup, corn (optional) picante sauce, water and tortillas in the skillet and heat to a boil. Reduce the heat to low. Cook for 5 minutes. Stir the beef mixture. Top with the cheese. Serve once cheese has melted. Notes: 1) For Creamy Mexican Fiesta Skillet, stir in 1/2 cup sour cream with the soup, 2) For a double recipe, use a full can (24oz) of family size 24oz tomato soup.
