Cheryl's Recipe Corner

Slow Cooker Irish Dublin Coddle

Ingredients
- 1 lb breakfast sausage (with sage, if possible) in smooth casings
- ¾ lb bacon
- 2 cups low-sodium beef broth
- 1 garlic cloves, minced
- 2 small onions, chopped into large chunks
- 1 lb potatoes or sweet potatoes, peeled and cut into large chunks
- 1 pound carrots (peeled and cut into chunks), optional
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
Directions
- Cook bacon and sausage over medium heat until fully browned. Drain any grease. Add all the ingredients to the slow cooker. Stir until well combined. Cook HIGH 2-3 hours or LOW 4-6 hours.
