  • Slow Cooker Irish Dublin Coddle 
  • Ingredients
    • 1 lb breakfast sausage (with sage, if possible) in smooth casings
    • ¾ lb bacon
    • 2 cups low-sodium beef broth
    • 1 garlic cloves, minced
    • 2 small onions, chopped into large chunks
    • 1 lb potatoes or sweet potatoes, peeled and cut into large chunks
    • 1 pound carrots (peeled and cut into chunks), optional
    • 2 tbsp fresh parsley, chopped
    • Salt and pepper to taste
  • Directions
    • Cook bacon and sausage over medium heat until fully browned. Drain any grease.  Add all the ingredients to the slow cooker.  Stir until well combined.  Cook HIGH 2-3 hours or LOW 4-6 hours.
