  • Description
    • Football season is upon us, and we know several folks that like to have football parties... and, what better for a football party than appetizer items? These are a tasty little thing that will have folks coming back for more!
  • Ingredients
    • 12 frozen bread dough dinner rolls
    • 1 package (12 ounces) frozen fully cooked Italian meatballs, thawed
    • Mozzarella Cheese (optional)
    • 2 tablespoons olive oil
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup minced fresh basil
    • 1-1/2 cups marinara sauce, warmed
  • Directions
    • Let dough stand at room temperature 25-30 minutes or until softened. Cut each dinner roll in half. Wrap each portion around a meatball, and placing some of the mozzarella (whether using shredded or slices/chunks) in with the meatball, then enclosing meatball/cheese completely; pinch dough firmly to seal. Place on greased baking sheets, seam side down. Cover with kitchen towels; let rise in a warm place until almost doubled, about 1-1/2 to 2 hours. Preheat oven to 350°. Bake buns 12-15 minutes or until golden brown. Brush tops with oil; sprinkle with cheese and basil. Serve with marinara sauce. Yield: 2 dozen.

    • Thanks for bringing up the "Pat" winlink client. I was looking for a open-source client running natively on Linux for quite a while, so I was happy to get aware of that. Maybe one should mention that while the "Pat" client itself is free and open-source and runs nicely cross-platform, it does NOT include a WINMOR driver/TNC. I can work WITH the official Windows-only WINMOR driver and this seems to run under wine. However, it is unfortunately still not possible to run WINMOR on a single-board computer like the Raspberry Pi. Keep up the good work, I really LOVE your show!! 73s, Torsten DL1THM. P.S.: maybe worth mentioning in some future episode as an real open-source alternative to Winlink: the PSKMAIL project.

  • Description
    • For me, summer cooking involves easy recipes that are quick to fix and require little to no time with the stove or oven on.  This is one of those recipes. It definitely takes care of my craving for easy-to-make desserts, and key lime pie is one of my favorites.
  • Ingredients
    • 1 (9 inch) prepared graham cracker crust
    • 3 cups sweetened condensed milk
    • 1/2 cup sour cream
    • 3/4 cup key lime juice
    • 1 tablespoon grated lime zest
  • Directions
    • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine condensed milk, sour cream, lime juice, and lime rind. Mix well and pour into graham cracker crust. Bake in preheated oven for 5 to 8 minutes, until tiny pinhole bubbles burst on the surface of pie. DO NOT BROWN! Chill pie thoroughly before serving. Garnish with lime slices and whipped cream if desired.

  • Slow Cooker Lemon Garlic Chicken
  • Description
    • A quick and easy lemon chicken recipe for slow cookers. This is a great recipe whether you don't have time to cook yourself or are setting out a buffet-style meal for guests.
  • Ingredients
    • 1 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 2 pounds skinless, boneless chicken breast halves
    • 2 tablespoons butter
    • 1/4 cup water
    • 3 tablespoons fresh lemon juice
    • 2 cloves garlic, minced
    • 1 teaspoon chicken bouillon granules
    • 1 teaspoon chopped fresh parsley
  • Directions
    • In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker. In the same skillet, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker. Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.

  • Easy Oven-Baked Chicken Fajitas
  • Description
    • Russ and I are huge fans of fajitas and this is an easy way to prep our favorite dish without having to fire up the grill. Our favorite fajitas were Chili's Mushroom-Jack Chicken, which had mushrooms, bacon and jack cheese melted over them. So this recipe is similar to those.
  • Ingredients
    • 1 large onion
    • 1 medium red bell pepper
    • 1 lb boneless skinless chicken breasts
    • 1 package (1 oz) Fajita seasoning mix
    • 2 tablespoons vegetable oil
    • Flour tortillas (6 inch)
    • Sour Cream
    • Salsa
    • Chopped fresh cilantro (Optional)
  • Directions
    • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cut onion and bell pepper into even slices; place in baking dish. Cut chicken breasts into thin strips; add to vegetables in dish. Sprinkle with seasoning mix; drizzle with oil. Stir until combined and pieces are coated. Bake 35 to 40 minutes, stirring once halfway through baking, until chicken is no longer pink in center. Spoon small amount of chicken and veggies onto each tortilla. Top each with sour cream, salsa and cilantro, or your favorite fajita toppings.
